Vegan Apple Slaw Recipe

Enjoy this sweet and tangy Vegan Apple Slaw recipe without mayonnaise but just as creamy! Buy your own apple tree and make this slaw right from your backyard!

Dressing Ingredients

  • 1 cup raw cashews (soaked)
  • ½ cup water
  • 2 tsp maple syrup
  • 1 tsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 1 tsp lemon juice
  • Pinch of sea salt and black pepper

Slaw Ingredients

  • 1 cup shredded carrot
  • 2 cups shredded red cabbage
  • 2 finely sliced apples

Instructions:

Soak cashews in hot water for one hour, cool water for 6+ hours, or overnight.

Make the slaw by shredding cabbage and carrots and finely slicing the apples. Place all together in a large mixing bowl.

To make the dressing, place cashews in a blender with water, apple cider vinegar, lemon juice, mustard, maple syrup, and salt and pepper. Blend on high until creamy and smooth. If the mixture is too thick, add more water. If it’s too thin, adding more cashews.

Now combined everything and pour dressing over the salad and toss well.

Taste and adjust flavor as needed. Chill the slaw for about 4 hours in a sealed container in the fridge. Use within 5 days.
